It doesn't delete the cache, it just updates when the cache is expired. 1 year cache is a good option.

What do you mean with " it just updates..." will my manually made translations be deleted after 365 days and I'll have to do all work again?

No, they will not. Human translations are permanent, unless you delete them manually.
Cache time is only for automatic translations. If the cache file is older than 365 days it will automatically re-translate.
